Considering how often I cook meatballs, it’s a surprise even to me that I’ve never made lamb koftas. I’ll always order them off a menu and so I went hunting online for some recipes – this is a mix of several.
First either finely chop or food-processor half an onion, a clove of garlic and the zest of a lemon. Add this mix to a pack of good lamb mince and season well. Add two good teaspoons each of cumin, coriander and dried thyme. Mush all this together with your hands and form around metal skewers.
Griddle, grill or fry and serve up with cous cous and chargrilled peppers with a big green salad. A couldn’t resist a few zingy onions too.
