Marvelous meatballs in tomato sauce

These quick and delicious meatballs are simple and cheap to make. This takes about an hour to cook but the prep time’s about 15 mins. So you can get it sorted as you walk through the door and go and do something else for an hour while it does its thing in the oven. So […]

Cheat’s chicken casserole – chicken and mushrooms in creamy white wine sauce

[tweetmeme source=”easyteas” only_single=false http://www.URL.com%5D Delia copped a lot of unfair flack for suggesting that it’s better to cook from scratch using a few shortcuts than not to cook at all. I agree and here’s my favourite cheat recipe – a creamy chicken in white wine casserole. I’ve been making it since student days so can’t […]

Korma from scratch

I searched high and low for a good korma recipe as I never found anything in a packet or jar that wasn’t gloopy and too sweet. I’ve worked on this over time as a recipe so it works for me every time. Although I will admit from the start that it’s a bit of a […]

Sausage Casserole

Walking in from two hours standing at a rather cold and rainy rugby match I feel the need for something rich, warming and appropriately autumnal. We may have been barbecuing in September, but normal service has now been resumed. I have tried the packet mixes for sausage casserole and there’s always something a bit gloopy […]

Tsatsiki and beef kebabs

Chicken and veg risotto

A 20-minute tea this, and tastes amazing. Looks like it takes much more effort than it actually does. I think I got the basic method from watching Valentina Harris do it on the telly. It’s simple and a great way to use a really wide range of ingredients as anything goes.

A roast chicken and a pot of stock

A little chicken roasts in an hour so it still fits the after-work brief – and once it’s in the oven you can go and do something else while it cooks away. I think it’s better value than a pack of portions as you’ll get at least two meals off it and can make stock. […]

Nice and easy minestrone

I seem to have been in a soupy mood recently. Must be the onset of autumn. The basic ‘sweat veg, add stock’ method works as the base for most soups I make. For this version, I did a quick check with Delia. It’s very easy and a good way to use up veg.

My favourite mash…

Seems a bit silly doing a post about mash, but it’s one of my favourite things in the world. So, chop the spuds up – smaller than for boiled so they cook quicker and are easier to mash. Boil in salted water until a knife goes into the middle easily. Drain well.

Chinese style crab and sweetcorn soup

Bit of an experiment, this. Trying to create a Chinese style soup for a quick tea and an excuse to break out a bag of prawn crackers. Very simple to make though. I had some chicken stock in the freezer from the last roast I did – boiled up the chicken carcass and wings with […]
