I was given a few round courgettes which looked like little yellow cartoon bombs – thanks to expert allotmenteer Nic for sharing with me. Check out her blog too.
I dug out an old Olive recipe and made this to go with the Parmesan chicken.
Finely slice the courgettes and a couple of tomatoes. Grate some nice strong cheese.
Pour about half a jar of passata into an ovenproof dish then layer up the courgettes, cheese and tomatoes. Season well as you go. A pinch of chilli flakes would be good.
Add a final layer of grated cheese and breadcrumbs on top and bake for about 20 mins in a hot oven (200 deg C).
The end result is rich and warming with the added benefit of melty, stringy cheese.
