Eggy pikelets

I really look forward to weekend breakfasts, but I’m always on the lookout for something a bit different to the usual full English.

I remember seeing Jamie Oliver use crumpets in an eggy bread/French toast recipe with a pile of fresh chilli – probably a couple of years ago now but you can see his recipe here. You soak crumpets in a beaten egg with a splash of milk then fry them in butter until golden and crispy.

I wouldn’t have known a pikelet from a bar of soap until my better half introduced me to them – but they make a great substitute for crumpets in this recipe (not easy to find but M&S often have them).

They’re thinner so the egg goes all the way through them and they’re done in minutes. Really press them into the egg mix to soak it all up – once they’re in the pan you can spoon on any leftover egg so that is soaks down into all the little holes.

Eggy pikelet and bacon

Great on their own with a bit of sauce, but even better with a bit of bacon and at least three cups of tea.
