As the Big Jubilee Lunch is just round the corner, I thought I’d post some easyteas that are good for sharing, work well on the BBQ or would be a good addition to a buffet.
I’m hoping to join the Cardiff Blogs Big Lunch – they’ve been asking food bloggers to help out with recipes so here’s some suggestions for buffet contributions, tasty BBQs and hot one-pot meals to share (for an indoor big lunch).
Buffets
Cheese and sweet onion tartlets, great with a big green salad or just a drink
Easy storecupboard pate (works with tuna too) – great on toasted ciabatta
Creamy filling of turkey, ham and leeks under light puff pastry. Good way to use up leftovers (pictured)
Cooling cucumber, garlic and yoghurt dip to go with spicy meats or salads
Flavour-packed tomato toppings for garlic toasts
Easy salad dressing and a few ideas to make them more interesting
BBQs
Soy, garlic and maple syrup marinade for salmon
Simple, easy homemade burgers
Lemon, thyme and sesame seed marinade for chicken kebabs
Easy, curried beef kebabs
A fragrant, spicy dry rub for BBQ or grilled meats (pictured)
One-pot meals to share
Easy recipe for a tasty chicken curry (pictured)
Pinched off Antonio Carluccio – the best Bolognese sauce I’ve ever tasted
A slow-cooked chilli that’s great for sharing
Like my mum used to make – beef ragu sauce, packed with Mediterranean vegetables
And finally
No Welsh Big Lunch would be complete without a batch of bakestones (Welsh cakes). It’s my grandma’s recipe so it must be good!
